On appearance, this wine has a captivating deep ruby color with hints of garnet at the edges. Its richness and depth are immediately apparent, followed by an aromatic profile layered with aromas of dark cherries, ripe blackberries, and plums that intertwine seamlessly with layers of wild herbs, thyme, and a touch of lavender. Subtle hints of baking spices add a comforting warmth to the audacious nose on this wine. Dark fruits take center stage but the richness of the fruit is complemented by intriguing nuances of leather, and cigar box. Velvety tannins provide structure and finesse countered by balanced acidity and well-integrated tannins contributing to a smooth, opulent mouthfeel, creating a wine of both power and elegance. To enhance this wine’s lively nature pair it with a spicy sausage slow-cooked, perhaps as cassoulet. Or keep it simple with an aged sheep’s milk gouda with earthy notes like Ewephoria from Cheeseland Creamery.
